And the most important thing for grapes is a cool night and hot summer days. Why? Because during a cool night the formation of sugar stops and saturation with macromicroelements, organics, amino acids, various compounds takes root.
Mountains that provide night coolness and temperature difference from hot days to cool nights and these are very good conditions for high-quality grapes. It also prevents the formation of fungal diseases. Such a temperature difference as we have in our country is a rare occurrence in the world! Therefore, this temperature difference is not only important in terms of the formation of the structure of macromicroelements but also very important for the health and quality of the grapes. That's why our grapes never get sick!
During all these years we have only pollinated our grapes three times. Because sometimes there are hot periods when the temperature did not drop at night or if it was not raining or snowing in the mountains for a long time. We did not do mass processing but only on the lesion manually. Although if you look at any region in the world their grapes are processed 15 times a season.
