Soft vinification methods

🍇 We did a molecular analysis of our grapes on modern equipment in the Enosis laboratory, which has a database of more than 20 thousand different berries from all parts of Europe. The result showed a huge amount of micro and macro elements in our grapes. ⠀

👉 Therefore, one of our fundamental values is to make the vinification process so gentle, to use forms and methods that do not interfere with the molecular structure of the berry. ⠀

🔸 We use very high quality products for vinification - yeast, bentonite, maxigum. ⠀
⠀
🔸 We ordered special containers where you don’t need to crush the pulp and don’t use pumps to run grape berries as we believe that any mechanical intervention in the berry is stress. ⠀

🔸 We want to turn everything that is unique in our terroir into grapes and for this we create all the conditions.
