Why oak barrels?

The structure of oak wood is grainy and dense, it does not clearly show long wood fibers. It is this structure that makes oak boards very durable and not subject to strong bending when dried or wet. The main thing is that the granular structure allows you to maintain the density of wood, porosity does not appear and this does not allow liquid to seep through the boards.

But still, the most valuable thing in its structure is that the oak plank allows the barrel filled with wine to slowly feed the life processes of the wine. That is, breathe slowly, enriching the wine with oxygen and nitrogen, accompanying the fermentation processes and allowing the wine molecules to transform into shorter chains, thereby forming the aromas inherent in this wine. At the same time, the wine still absorbs both the aromas of oak and its structural substances.
